Kitchen Diaries (formally Today’s Table) is my daily note from the kitchen, one meal at a time. Some days it is a new recipe, some days a cookbook favorite, and some days something I make up as I go. It is a quick peek at what is cooking, what is working, and what story the table is telling today. Sometimes the whole menu changes because of one forgotten ingredient. On Wednesday, that ingredient was tomatoes.

Huevos Rancheros had been planned for brunch, but without tomatoes, that meal had to move itself right on over to Saturday. It was not a complete tragedy because we still had leftover honey butter layered biscuits with small batch strawberry raspberry preserves from Tuesday. The biscuits held up beautifully, still tender enough to warm and split open, and the preserves gave brunch that bright berry sweetness with just enough tartness from the raspberries. It was a good reminder that leftovers are not always a backup plan. Sometimes they are the plan that saves the morning.

Dinner took us downtown to Yaga’s Cafe, just a quick walk down The Strand. With all the rain we have been having, we made a break for it between the weather and somehow managed to sneak in a meal without getting wet.

Chad had the ten-dollar Wednesday night special, a fried chicken club with fries and a drink. I had sweet tea, fries, and sliders, which are honestly so good. Nothing fancy, nothing overplanned, just a walk, a table, and food that did not require dishes waiting in the sink.

Today, brunch was a walnut swirl cinnamon quick bread from Magnolia Table Vol 1. The cinnamon swirl added warmth, the walnuts gave it texture, and the quick bread itself made brunch feel simple but still special.

For dinner, we had leftover Crew’s spaghetti and meatballs. The sauce had thickened in the refrigerator, so I added a little chicken broth to loosen it back up as it warmed. That small splash brought it right back to life. The meatballs may have fallen apart the first night, but the flavor held on. If anything, the leftovers tasted just as good the second time, maybe even better after everything had settled together.

That seems to be the kitchen lesson from these two days. Forgotten tomatoes do not ruin brunch. Leftover biscuits can step in. A little chicken broth can rescue cold sauce from the fridge. And sometimes, the meal you actually eat tells a better story than the one you had planned.
